Instructions

Step 1
Cream butter, brown sugar, vanilla essence, lemon zest and ground almonds to a paste.
Step 2
Thinly slice the nectarines, set aside.
Step 3
Mix together lemon juice, cornflour and icing sugar. Add the nectarines and toss them to coat.
Step 4
Roll out the shortcrust pastry and cut out a 26cm circle, spread the almond cream on top of the pastry.
Step 5
Place the sliced nectarines over the cream, leave a 3cm border around the edge.
Step 6
Fold the edges over to form the galette
Step 7
Brush the pastry with egg wash, sprinkle the dark brown sugar over and bake for 40min on 180C thermofan.
Step 8
Once baked brush the galette with apricot jam, serve warm with a scoop of vanilla ice cream
