Instructions

Step 1
Melt butter in a saucepan until it gets to color brown without over cooking it. Total volume once melted should be 1 cup. Add more butter (or water) to get to 1 cup. Let cool down to room temperature.
Step 2
Sift flours, baking soda,and kosher salt together. Put it aside.
Step 3
In a large bowl, mix sugars and vanilla. Add melted butter (at room temperature) to it and cream it together woth a hand mixer. Add egg and egg yolk. cream again.
Step 4
Incorporate flour by 1/3. leave a little bit of flour unincoporated on the top of the mix.
Step 5
Cut the dark chocolate into chunks with serrated knife. add Chocolate chips and chocolate chunk to the mix along with the flour left unincoporated of the top and side of mix.
Step 6
Scoop out 12 scoops and place on a parchment paper on a cookie baking sheet and regriferate for 1 to 24 h.
Step 7
Bake 12 to 15 minutes at 350°F
