This delicious soda bread recipe can be made as a single, circular loaf (as written) or as two loaves. (9”x5”). Half the recipe for one loaf in a smaller pan. If using loaf pan, cut cooking time down to approx 25-30 min.

Instructions
Step 1
Using first 2 Tbsp, smear butter evenly into a 10-inch cast iron skillet (if using loaf pan, coat with butter)

Line the pan or skillet with waxed paper
Step 3
Melt second 2Tbsp of butter in separate pan/cup and set aside
Step 4
Preheat over to 350 degrees
Step 5
Sift dry ingredients together in a bowl (flour, sugar, baking soda, salt, baking powder)
Step 6
Add raisins and toss well to coat. This step is vital to ensure raisins distribute through loaf
Step 7
Whisk together buttermilk, vanilla, sour cream, eggs, and melted butter from earlier step (2Tbsp)
Step 8
Add combination to dry ingredients and mix until blended. Do not over mix.
Step 9
Spoon batter into prepared pan. Smooth top gently with a spatula.
Step 10
Cut final 2Tbsp butter into cubes. Dot into the top of the bread.
Step 11
Bake until golden brown 45-55min (25-35 if loaf pan)
Step 12
Remove from oven. Cool on a wire rack.
Step 13
Cut into slices. Serve warm.
