Cinnamon Breakfast Rolls

This recipe is really amazing as a breakfast or dessert. I generally use a baking pan that's 1 size bigger than they say so the rolls are more defined but that's completely optional.

Ingredients

For the Dough
¼ cupwater
warm
1 Tbspactive dry yeast
1 Tbspgranulated sugar
⅔ cupwhole milk
4 Tbspbutter
3 cupsflour
½ tspsalt
2eggs

Step 1
Combine the water, yeast, and 1 tbsp sugar in a small bowl and set aside until puffy (around 5 mins)

Heat the milk and butter in a small saucepan until the butter is melted, set aside

Whisk together the flour and salt in a large mixing bowl, set aside

In a mixing bowl, whisk together eggs and sugar, then add in the milk-butter mixture.

Add the egg mixture to the flour mixture, then add the yeast mix, stir to combine.

Knead the flour until smooth and elastic, about 10 mins

Place in an oiled bowl and turn to coat. Cover in plastic wrap and let sit in a warm place until doubled, about 90 mins- 2 hours.

Grease and flour a 9"x13" pan.

Turn the dough out onto a lightly floured surface and roll into a 16"x12" rectangle.

Brush the melted butter over the dough

Combine the brown sugar and cinnamon and sprinkle it over the dough, leaving 1/2 inch borders

Roll dough on the long side, then cut off the messy ends.

Cut the roll into quarters, then those quarters into thirds to make 12 rolls.

Lay the rolls in the prepared pan and leave to rise until the rolls are touching each other, about 90 mins-2 hours

Make sure the oven rack is in the center of your oven then preheat to 350 F. Bake rolls for 20 mins until golden brown.

Cool 10 mins.
For the Icing

Beat the icing ingredients together with a wooden spoon until smooth. Spread or drizzle the icing over the rolls while they're warm.

Serve the rolls immediately, they don't keep well but can last for about 2 days in an airtight container.
