Scrambled Egg & Sausage Breakfast Bowls

A substantial breakfast that can be enjoyed hot or cold. Cooking the eggs in the same pan as the sausages may discolour them a little, but it adds tons of extra flavour.

Step 1
Heat half the oil in a large sauté pan over a medium heat. Add the onion, garlic & peppers & taco seasoning, then sauté till softened, about 5-6 minutes. Add the black beans to the pan, stir well & cook for 1 more minute. Season with salt & pepper, then scrape the contents of the pan onto a plate & set aside.
Step 2
Fry the sausages in the same pan until golden brown, about 12-15 minutes, then remove from the pan & allow to cool.
Step 3
In a mixing bowl, whisk together the eggs & cheese & season with salt & pepper. Heat the remaining oil in the same pan, still over a medium heat. Add the eggs & cook, stirring continuously, until scrambled to your liking.
Step 4
Divide the scrambled eggs between four meal prep containers, then add the sausages & onion & pepper mixture & top with the cherry tomatoes. Garnish with chopped fresh parsley. Eat hot or cold.
