Kohlrabi Apple Slaw
Have you tried kohlrabi? The bulbs are slightly sweet with a mild peppery bite and can be eaten raw or cooked. They make a great cruciferous addition to your salad.

1apple
small, cored and cut into 1/4 inch matchsticks

1shallot
small, thinly sliced

1carrot
peeled and grated

¼ cupwalnuts chopped

black pepper
to taste
FOR THE DRESSING
Instructions
Step 1
Combine kohlrabi, apple, shallot, carrot and walnuts in a medium bowl.
Step 2
Blend dressing ingredients in a high-powered blender. Toss salad with desired amount of dressing. Season with black pepper.
