For the Jam:
Step 1
-In a medium pan, heat the olive oil over medium heat for a minute or so then add the sliced onions. Cook on medium, stirring occasionally until they are tender and have begun to brown a bit. -Add the sugar, vinegar, mustard, blackberries (optional) and dry thyme and mix it in well. Season with salt and pepper and continue to cook until almost all the liquid is gone and the mixture is thick and glossy. -Remove from the heat and allow to cool fully.
To Assemble:
Step 2
-Set your oven to 415*F and place a sheet of parchment on a baking tray.
-Lay one sheet of phyllo on your counter and liberally brush it with butter. Place the brie wheel in the middle and working from the corners, bring the sheet of phyllo in so it all gathers in the middle of the wheel.
-Flip the brie over so that the gathered part of the phyllo is now on the bottom.
-Place all your onion jam directly in the middle on top of the brie.
-Lay out another piece of phyllo, butter well and place the wheel of brie with the jam on it directly in the middle.
-Gently bring the phyllo up around the edges of the brie, and loosely cover the jam with it. It should look rough and organic but should still cover the jam.
-Repeat this process with at least one more time maybe two more times if you want more crisp phyllo.
-Brush the top with more butter, season with black pepper, then bake at 415*F for 18-25 minutes, or until the phyllo is totally crisp all around and well browned.
-Cool for at least 15 minutes before serving with your favorite crackers, cut up seasonal fruit and toasted bread.
