For the cake
100mlVegetable Oil
plus extra
275gSelf Raising Flour
200ggolden caster sugar
1 tspBaking Powder
1Lemon
zested

For the cake
Step 1
Heat oven to 180c and oil/line a 1lb loaf tin
OvenPreheat
Step 2
Mix the flour, sugar, baking powder, and lemon zest in a bowl
Step 3
Add the oil, 1/2 the juice from the lemon and 170ml cold water
Step 4
Mix until smooth and pour the mixture into the tin
Step 5
Bake for 30mins or until a knife comes out clean
Step 6
Cool for 10 mins in the tin and then cool fully on a wire rack
For the icing
Step 7
Mix just enough lemon juice into the icing sugar to make a thick icing (not too thin that it runs off the cake) and decorate
