Instructions

Step 1
Preheat the oven to 180°C
Step 2
Heat the oil in a pan and fry off the onion, carrots and celery until slightly soft
Step 3
Once the vegetables have softened slightly, throw in the mince
Step 4
Keep stirring until the mince is cooked through and then add in the chopped tomatoes, oregano, vegetable stock (and water) and Worcestershire sauce
Step 5
Leave the mince to simmer for 15 mins whilst you make the roux
Step 6
To make the roux, melt the butter in a pan and whisk in the flour, cook this off for 2 mins and then gradually add in the milk, little by little. Stir constantly to ensure no lumps and once thickened, season and leave to the side
Step 7
Layer the lasagne - place half the mince in the bottom of the dish, top with pasta sheets, cover with white sauce, repeat this process again and then top with cheddar
Step 8
Bake in the oven for 35-40 mins
