20chicken wing pieces
300mlbuttermilk
2 tablespoonshot sauce
1 tablespooncayenne pepper
230gplain flour
2 teaspoonsalt
1 ½ teaspoondried thyme
1 ½ teaspoondried basil
4 tablespoonpaprika
1 teaspoondried oregano
1 tablespooncelery salt
2 tablespoongarlic salt
1 tablespoonblack pepper
1 tablespoonmustard powder
3 tablespoonwhite pepper
1 tablespoonground ginger
Instructions
Step 1
Add chicken wings to a bowl. Pour over buttermilk, hot sauce and cayenne pepper. Mix well and refrigerate for 1 hour.
Step 2
In a shallow tray mix together the remaining herbs and spices with the plain flour. To the side fill up a large bowl with cold water.
Step 3
2 or three at a time place the wings in the flour mix and cover completely.
Step 4
Pick up the wings individually by the top of the bone. Quickly sunk into the water and then back into the flour mix for a second coating.
Step 5
Fry in 160 degree oil in batches for 6 minutes.
