Beautifully Simple Beef Pita with Tzatziki

Instructions

Step 1
Cook the falafel stuff
Step 2
In a small bowl, mix yoghurt, 3 tablespoons of tomato, 3 tablespoons of finely diced cucumber, sliced dill and a ¼ teaspoon of salt.
Step 3
Dice the remaining tomatoes & cucumber, and combine with parsley and remaining dill in a small bowl, season to taste with salt and pepper.
Step 4
Gently heat the pita briefly in a microwave or oven for 5 minutes to just warm through.
Step 5
Spoon 3/4 cup beef mixture over each pita bread; top with cucumber and tomato salad, and a good drizzle of yoghurt sauce.
