3red bell peppers

1 cupcherry tomatoes
4garlic cloves
rough chopped
1 tablespoonolive oil
1 tablespoonbalsamic vinegar

1 boxsilken tofu

Instructions
Step 1
Preheat oven 400 degrees.
Spread red pepper chunks, quartered onion, cherry tomatoes and garlic cloves on a sheet pan. Drizzle vegetables with olive oil and balsamic vinegar and lightly toss to coat. Bake on oven 20-30 minutes until vegetables are roasted & tender.
Carefully place red pepper mixture in blender or food processor. Add tofu, nutritional yeast, salt & pepper and blend until combined. Can add 2-3 pieces sun dried tomatoes if desired.
Toss with pasta (delicious over cauliflower pasta) & enjoy!
