Chicken Nduja & Rice Bake

Once foil is removed at step 6 I insert a meat thermometer set for chicken to ensure properly cooked through without overcooking. If chicken comes to temperature sooner than all liquid evaporated from rice mixture, simply remove & keep warm.

Instructions

For the Njuda Paste

Step 1
Put all the ingredients for the paste into a large bowl and mix together. Add the chicken, garlic and 3/4 of sliced onion & mix well to coat evenly.

To make the bake

Step 2
Preheat oven to 180 degrees c.
Step 3
Scatter onion and garlic in a baking dish (approx 25x35 cm), place butter in the centre. Bake for 15 minutes (check at 12 minutes, mix if some bits are browning too much.
Step 4
Mix rice with other ingredients (peas, broccollini, baby tomatoes) and add to butter/onion mixture.
Step 5
Place chicken on rice, then pour chicken stock and water around the chicken.
Step 6
Cover with foil, then back for 30 minutes. Remove foil, & back for further 20 minutes until liquid absorbed.
Step 7
Stand for 5 minutes, then remove chicken & fluff up rice. Garnish with parsley.
