Ingredients

1 Tbspolive oil

1onion

400gleeks

2garlic cloves

400gcan chopped tomatoes

4 Tbsprose harissa paste

500mlfresh vegetable stock

400gcan cannellini beans
drained and rinsed

300gCooked King Prawns
Extra, Large

1lemon
zest and juice

12gflat leaf parsley
roughly chopped

crusty bread
or toasted sourdough, to serve

Instructions
Step 1
Chop the onion and leeks into 0.5-1cm slices. Heat the oil in a large saucepan.
Step 2
Gently fry the onion and leeks with a pinch of salt over a medium heat for 8-10 minutes, until softened and slightly golden.
Step 3
Crush and stir in the garlic, cover with a lid and cook for 5 minutes over a low heat, stirring occasionally.
Step 4
Stir in the chopped tomatoes, harissa paste and stock.
Step 5
Bring to a simmer then cook, uncovered, for 15 minutes, stirring occasionally
Step 6
Add the cannellini beans, then simmer for 2 minutes.
Step 7
Season, then stir in the prawns, lemon juice and most of the parsley
Step 8
Cook for 2 minutes to heat through the prawns.
Step 9
Scatter over the lemon zest, remaining parsley and a grinding of black pepper.
Step 10
Serve with crusty bread or toasted sourdough.
