Ingredients

2 cupsorzo
3mini cucumbers
diced
1 cupgrape tomatoes
diced
1 cupartichoke hearts
chopped
2 cupsfeta
small cubes
1 tablespoonbasil
chopped
dressing
½ cupolive oil
1lemon
zested & juiced
1 tablespoonapple cider
or red wine vinegar
1 tablespoonwater
1 tablespoonbasil
chopped
2 teaspoonsdried Italian seasoning
oregano, basil/parsley
1 teaspooncelery salt
1 teaspoongarlic salt
1 teaspoonblack pepper
Instructions
Step 1
Bring a pot of water to a boil and salt generously- once boiling cook orzo according to the package. Strain, cool, and set aside while you prep your veggies and dressing.
Step 2
In a mason jar- add all dressing and shake well.
Step 3
In a large bowl or container with a lid- toss all together, cover, and store in the refrigerator.
Step 4
Serve cold and enjoy!
