Summer rolls are one of my fav chocolate bars (peanut, coconut and chocolate 𤤠) so i had to turn them a healthier treat! No bake, only 6 ingredients, high protein, can be made gluten and dairy free.

Instructions
Step 1
Melt 100g chocolate in a microwave safe bowl, heating in 30 sec increments so it doesnât burn
Step 2
Add remaining ingredients to the bowl and mix to form a dough. Press mixture into a lined baking tin.
Step 3
Melt remaining chocolate per step 1 and spread over the top. Sprinkle with extra coconut and refrigerate until set.
Step 4
Slice into 12-14 bars and store in the fridge.
