Step 1
Start browning the ground beef. When there is a fair amount of grease in the pan, add onion and minced garlic and cook until the meat is no longer pink.
Step 2
Add diced bell pepper, taco seasoning and enchilada sauce and stir to combine.
Step 3
Cook until sauce begins to bubble, then reduce heat to medium-low (4) and let simmer for about 5 minutes. Stir, then serve.
