Ingredients
8 servings
1.5 lbground beef
1 ½ cupbrown rice
or white, I used rice that was made the day before, and refrigerated
1 cupfrozen corn
15 ozRotel
can, drained
½ cupcanned black beans
drained and rinsed
½ cupgreen onion
chopped, plus 2 tbsp to top off with
½ cupsharp cheddar cheese
Low Sodium Taco Seasoning
Homemade
2 TbspSeasoning
1 ¼ tspchili powder
1 tsponion powder
1 tspgarlic powder
Instructions
Step 1
Brown the ground beef in a skillet over medium heat. Drain out all of the fat
Cast Iron Skillet
Step 2
Sprinkle in all of the seasonings, and stir.
Step 3
Add in the corn, rotel, and green onion, then mix the ingredients.
Step 4
Cook for five minutes then add in the rice, and fold in all of the ingredients.
Step 5
Next, add in the beans, and stir the ingredients until well combined.
Step 6
Cook for 5 minutes or so, then turn off the heat, and top with cheese and green onions.
Step 7
