Instructions
For the Milk
Step 1
1. warm milk in a large pot on medium low flame. Make sure to stir occasionally to prevent milk from sticking to the bottom

2. Once the milk is warmed and starting to slightly bubble, add sugar. Make sure not to add it to cold milk or else the sugar may get stuck to the bottom of the pot.
Step 3
3. Add 4/5 green cardamom and let the milk cook on low whilst you prepare the dough
For the Balls
Step 4
1. add milk powder, baking powder, plain flour and mix

2. Add ghee and roughly mix
Step 6
3. Add beaten eggs bit by bit and mix well till you have a soft but firm dough

4. Let the dough rest for 2 minutes.
Step 8
5. Roll dough balls into smooth balls. The balls double in size so don’t make them too big. Try to make them as crack free as possible.

6. Increase the heat of the milk pot to high and let it come to a light boil.
Step 10
7. One by one, add your balls. Do not mix with a spoon. Let the ball cook on high for 5 mins then lower heat and let it cook for 10 mins. (Note: cooking time may differ depending on ur milk powder and size of balls so take one out after ten mins and see if it’s cooked through)

8. If you feel like the balls need to be mixed then gently stir your pot. Avoid using a spoon

9. Put rasmalai in a container that you will refrigerate in. Garnish with pistachios and almonds! Enjoy cold!
