Rice Balls in Sweet Coconut Milk (Ginataang Bilo Bilo)

This is an assortment of fruit, sweet potato, sticky rice balls, and tapioca in a sweet coconut milk base. Adjust the sweetness depending on your liking!

For the glutinous rice balls:
2 cupsglutinous rice flour
2 tablespoonssugar
1 cupwater
hot
¼ teaspoonpandan extract
or any other flavoring
salt

Instructions
Glutinous (Sticky) Rice Balls:
Step 1
In a bowl, mix together the glutinous rice flour, salt, and sugar.
Step 2
Step 2 Add the water and pandan extract, and mix with chopsticks until it starts to form a dough. Knead the dough with your hands until smooth.
Step 3
Take a small piece of the dough and roll it between your fingers to form a ball. Place it on a plastic wrap-lined plate, and repeat until all the dough is used.
Step 4
In a medium pot, boil enough water so the glutinous rice balls can be fully submerged.
Step 5
Once boiling, place the glutinous rice balls in the water and wait until they float. Wait a few minutes before removing them from the water, then set aside on a plate.
For the tapioca pearls:

In a medium pot, bring 3 cups of water to a boil. Add the mini tapioca pearls and simmer for 10-12 minutes until fully cooked.
Step 7
Drain the liquid through a sieve, and set cooked tapioca pearls aside.
For the Ginataang Bilo Bilo:

In a large pot, combine water and coconut milk. Add the sliced purple sweet potatoes, and simmer until fork tender.
Step 9
Add the sugar and salt, and mix to combine. Adjust the sweetness to your liking.
Step 10
Add the sliced bananas, rice balls, and tapioca pearls. Simmer for a few minutes, then remove from the heat. Enjoy HOT!
