Instructions
Step 1
Over medium heat in a Dutch oven or high walled skillet heat the oil then add the flour and make a dark roux.
Step 2
Add the onions, green onions and parsley. Cook until the onions are clear.
Step 3
Add one cup of stock and stir until a thick paste is formed.
Step 4
Add garlic and stir. Add the remaining stock until it is mixed with the roux.
Step 5
Add the potatoes, meat, salt, and hot sauce. Cover, reduce heat to low and simmer until the potatoes are tender.
Step 6
Serve over rice or grits.
