Instructions
Step 1
In a large mixing bowl combine the first five ingredients.
Step 2
Add eggs and oil; beat until well blended. Stir in the carrots pineapple coconut and walnuts.
Step 3
Pour into two greased and floured 9-in. round cake pans. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
Step 4
For frosting cream butter and cream cheese in a large mixing bowl. Beat in vanilla and lemon extract if using. Gradually beat in confectioners sugar until light and fluffy.
Step 5
If needed add milk to achieve desired consistency. Cut each cake horizontally into two layers; place on a serving plates.
Step 6
