Instructions

Step 1
Place the eggs in a pot of cold water and bring it to a boil. Turn off the heat, cover the pot, and let it stand for 5 minutes. Then run the eggs continuously under cold water until they have cooled.
Step 2
Peel the eggs and place them in a large bowl. Use your hands or a fork to mash them up as much as you like. Stir in the shallots, capers, celery, parsley, olive oil, vinegar, and mustard. Sprinkle the mixture with sea salt, stir to combine, and taste and adjust the seasonings.

Variations

Step 3
Replace the sherry vinegar and mustard with 2 teaspoons curry powder and 1 tablespoon lemon juice.
Step 4
Try fresh dill instead of the parsley. (Vegetarian-Contains eggs).
