Dressing
Instructions
Step 1
Place the eggs in a pan of cold water. Bring to the boil over medium heat, then simmer for 4 minutes.
Step 2
Drain and rinse under cold water. Peel and quarter the eggs. Set aside.
Step 3
Place the dressing ingredients in a small bowl or sealable jar with a lid. Stir or shake to combine.
Step 4
Arrange the lettuce, tuna, tomatoes, olives and red onion in equal serves. Drizzle over the dressing and gently toss to coat.
Step 5
Top each bowl with egg quarters, sprinkle with salt and pepper and garnish with parsley to serve.
