Prep the cooked ingredients
Step 1
Precook bacon and broccoli florets. I roast them in two separate baking dishes in one go in the oven. About 15-20 min at 200°C. Also, this is the time to make croutons if you’re making them from scratch. Baking in the same oven but separate dish is ok, they might cook faster than broccoli and bacon through, so check in on them half way through

Step 2
Shred the chicken. I use a rotisserie chicken, but any chicken leftovers would do: from broth, chicken soup, roast chicken or boiled chicken breast

For the dressing
Step 3
In a cooking bowl or mortar/ pestle, grind the garlic clove with the coarse salt until it’s smooth as a paste

Add anchovy, continue grinding into a paste

Add egg yolk, lemon juice, mustard and black pepper, whisk altogether until smooth

Drop by drop, add olive oil while continuing vigorously whisking everything.

Whisk in 1/4 cup Parmesan, keep the rest for the presentation

Adjust salt and pepper to your liking
Assemble the salad

Tear up baby romaine and place into the same bowl as the sauce, mix everything well until the salad is well coated

Place the salad leaves onto two plates. Artfully top with broccoli, chicken, croutons and bacon.
