3-Ingredient Pepita Wraps

Who would have thought that just pepitas, psyllium husk and water could make these amazing wraps? They are flexible, fluffy and a fabulous source of healthy fats, magnesium and zinc. Optionally add in spices for extra flavour and enjoy with your favourite wrap fillings.

Instructions
Step 1
Place pepitas into a food processor and process until fine and flour-like. Avoid over-processing as it will turn into a seed butter.
Step 2
Pour into a bowl. Add the psyllium husk (and optional seasonings) and mix well. Add the water and mix until a dough forms.
Step 3
Place dough between two pieces of parchment paper and roll with a rolling pin until 2-3mm thick. Use a cookie cutter or saucepan lid to cut out a circle wrap. My mixture made 4.
Step 4
Place the wrap on a non-stick fry pan on low-medium heat and cook for 1-3 minutes or until it begins to brown. Flip and cook for a further 1-2 minutes. Remove and allow to cool.
Step 5
Add your choice of fillings and wrap. Enjoy! Store in the fridge for 3-4 days.
