Classic burger with celeriac chips

Instructions
Step 1
Preheat the oven to 220°C/fan 200°C/Gas

To make the celeriac chips, carefully cut the celeriac into roughly 5cm slices and then into chips, Place in a bowl with the oil, a couple pinches of sea salt and lots of ground black pepper.
Step 3
Toss well together.
Step 4
Scatter over a baking tray and bake for 20 minutes, Turn the chips and return to the oven for a further 5-10 minutes, or until tender and lightly browned.

Meanwhile, make the burgers.
Step 6
Put the onion, garlic, carrot, mince, salt and dried mixed herbs in a bowl, season with lots of ground black pepper and

combine thoroughly with your hands.
Step 8
Divide the mixture into 4 balls and flatten into burger shapes.
Step 9
Make them a little flatter than you think they should be, as they will shrink as they cook.
Step 10
Place a large non-stick frying pan over a medium heat and cook the burgers without any additional fat for 10 minutes, or until lightly browned and cooked through, turning occasionally.
Step 11
Press the burgers every now and then with a spatula so they cook evenly.
Step 12
Divide the chips between four warmed plates and serve a burger alongside.
Step 13
NON-FAST DAYS - Top the burgers with slices of blue cheese and pop under the grill.
