Preparation
Step 1
Remove some of the fat from the pork shoulder. Cut into even-sized chunks, roughly the size of a chicken thigh, not too thick to ensure an even cook.
Step 2
Add the marinade ingredients to the pork into a large metal bowl and massage the spices in.
Step 3
Marinate overnight or up to 2 nights.
Bake
Step 4
Lie flat on a lined baking dish and bake at 420F for 35 minutes for 1 inch thick country style rib with convection off.
Step 5
Allow to cool before slicing thinly and serving.
