Ingredients

1 stickcelery
chopped finely
2carrots
medium, peeled and chopped finely
0.5onion
medium, chopped
1 tablespoonolive oil
3cloves garlic
minced
3 tablespoonsflour
4 cupschicken broth
¼ teaspoonitalian seasoning
¾ cupjasmine rice
uncooked
1 cupheavy whipping cream
1 poundchicken breast
uncooked, cut into bite-size pieces
Instructions
Step 1
prep veggies + chicken
Step 2
add celery, carrots, onion + olive oil to a soup pot over medium-high heat. sautè for 5-7 mins, stirring occasionally.

stir in garlic & cook for 30 seconds
Step 4
stir in flour and cook for a minute
Step 5
slowly pour in the broth and stir/scrape up the brown bits from the bottom of the pot until flour has dissolved.
Step 6
stir in the italian seasoning, rice + cream. increase the heat to high and once the soup comes to a gentle boil, give it a good stir, then reduce the heat so it’s simmering & cover the pot with the lid slightly ajar. simmer the soup for 10 minutes. i stir it every now & then to prevent the rice from sticking to the bottom.
Step 7
add in the chicken & cook for another 7-10 minutes or until the chicken + rice are both cooked. season with salt + pepper as much as needed. ( i shredded my chicken but it’s a personal preference for you )
