For the Chicken Souse
Instructions
Step 1
To make the Johnny cake, grease and flour a baking dish or square cake tin 20-25cm x 20-25cm. Preheat the oven to 180 degrees.
Step 2
Rub the butter into the dry ingredients until it looks like fine breadcrumbs.
Step 3
Mix the wet ingredients into the dry ingredients and beat for about 3 minutes.
Step 4
Pour into prepared tin. Spread with a little butter if desired and bake for 40-50 minutes until golden brown. Serve warm with the chicken souse.
To make the chicken souse
Step 5
Bring a large pan of salted water to the boil.
Step 6
Season the chicken and add it to the pan. Boil for 15-20 minutes.
Step 7
In a medium saucepan simmer the sliced onions, all spice berries, vinegar and a ladle of water from the chicken pot. Simmer until the onions are tender. If desired add a hot pepper or two to the pan.
Step 8
Drain the water from the chicken pot and refill with fresh water. Season and cook on low heat for 15 minutes.
Step 9
Add onion mix to the chicken pot and simmer until the flavours are fully developed and the chicken starts to fall from the bones.
Step 10
Serve with warm Johnny cake.
