Instructions

Chicken

Step 1
Season chicken with salt and black pepper. Place it in a sous-vide bag (zip-loc works) with 3 smashed cloves of garlic, 2 smashed scallions, and 2 cm of smashed ginger.

Step 2
Sous vide chicken at 65 C (150 F) for 1.5 hours, then immediately chill in an ice bath. Alternatively, you can add all the ingredients from step 1 into some heavily salted water and boil the chicken for 10 minutes until cooked through.

Salad Dressing

Step 3
(Optional) Toast sichuan peppercorns and sesame seeds in a pan over medium heat until fragrant (about 1 min).

Step 4
Roughly grind sichuan pepper corns and sesame seeds in a mortar and pestle. Then combine with sugar, sesame paste, soy sauce, vinegar, grated garlic and chilli oil in a bowl. Adjust seasoning with salt and sugar if necessary.

Assemble Salad

Peel the kohlrabi, then julienne it along with the cucumber and scallions. You can rinse and dry the scallions in ice water to dull the flavor if you don't want it too onion-y.
Step 6
Remove your chicken from the sous-vide bag and shred it.
Step 7
Assemble salad onto a plate by layering chicken, cucumber, kohlrabi, and scallions. Then drizzle the dressing all over. (Or you can just toss it all together in a bowl). Enjoy!
