Instructions
Step 1
Preheat oven to 425. Bake sweet potatoes and let cool. Turn oven down to 350.
Step 2
Puree sweet potatoes in a food processor or blender.
Step 3
Using a food processor or blender, mix all ingredients into pureed potatoes.
Step 4
Scoop into silpat molds or cupcake pan, fill ¾ of the way full.
Step 5
Bake at 350 for 9-12 minutes or until mostly set, just a little soft in the center.
Step 6
Serve with whipped cream.
