Instructions
Preheat oven to 400F or Grill to med.-high
Step 1
In bowl, toss chicken breast with 1t Italian seasoning.
Step 2
Lay out 2 pieces of aluminum foil & spray with cooking spray. For each foil, place chicken in center; arrange vegetables on the side of chicken. Drizzle veggies with olive oil; sprinkle with Italian seasoning.
Step 3
Fold aluminum foil over food; close ends & roll together 2-3 times.
Step 4
Poke hole in corner of each; bake/grill (25-30 min.), until potatoes are tender & chicken is cooked through.
