Bund Pan Roast Chicken with Crispy Potatoes

If you’ve never roasted chicken in a Bundt pan I recommend it as it is so delicious and juicy not to mention the potatoes are cooked in the juices that runs down making them crispy and full of flavor !

Step 1
Pat the chicken dry with paper towels then use 3 tbsp of your favorite chicken seasoning and mix it with the olive oil or you can use my chicken seasoning mix it is the recipe before this one . Season with a little extra salt and pepper

Step 2
Rub the marinade all over the chicken and rub it inside the chicken so it gets nice and flavorful. Now sit the chicken on a Bundt pan and place the Bundt pan on a baking tray . Bake the chicken in the oven for 30 minutes at 200 c /400f fan setting
Step 3
While the chicken is cooking cook floury potatoes until soft then give the pot a shake to fluff them up .

Take the chicken out of the oven and baste it with its juices then add the potatoes into the pan and pour some of the juices on the potatoes . Add a little drizzle more olive oil salt and pepper to taste and the bashed garlic and rosemary . Put back in the oven for about 45 more minutes depending on the size of your chicken . Mine was perfectly cooked and the potatoes were lovely and crispy

Let the chicken rest a few minutes then serve with potatoes and any other veggies you like . Enjoy
