A simple chicken casserole that I put together when Carol had a problem with strong flavours.

Instructions

Step 1
Put the oil in a large frying pan and heat.
Step 2
Gently fry the leek and carrot. Once softened move to one side of the pan.
Step 3
Fry the chicken until lightly browned both sides. Then mix the leek and carrot back in.
Step 4
Add the chicken stock and crumble in ½ a stock cube. Season.
Step 5
Add the potatoes.
Step 6
Reduce the heat and leave to cook (stirring occasionally) for about 45 minutes until the chicken is cooked through and the potatoes are starting to fall apart.
Step 7
Serve in a soup bowl, accompanied by the bread.
