Step 1
1. Preheat oven to 220° and grease a muffin pan
2. Mix together melted butter, plant milk and egg
3. Add grated carrot and combine
4. Add flour, sugar, baking powder, cinnamon and vanilla extract and mix to combine
5. Evenly distribute into muffin tin
6. Bake for 5 minutes before turning oven down to 180° and bake for another 15-18 minutes
7. Add all icing ingredients together and once muffins and completely cooled evenly distribute icing onto muffins
