Pasta - Lentils sauce

Pasta is one of the most famous italian dishes. It is easy to make and most of the times all the ingredients are sitting in the fridge. This vegan sauce is made with lentils, onions, carrots and celery.

Instructions

Step 1
Mince carrots, celery and carrots. You can mince them small or quite large, do it according to your own taste.

Place a sauce pan on your stove with the olive oil and let it warm at medium low heat for 5 minutes.

Once the oil is warm, put 1/3 of the minced carrots, celery, onion and let cook for five more minutes. Add then the lentils and the vegetables left and stir gently for 5 minutes.

Step 4
Add now the tomato (or tomato sauce) and the tomato paste. Stir for a couple of minutes and then add salt at pepper at your own taste. Add a couple of spoon of hot water and mix it before covering the sauce pan and decrease the heat to a low temperature.

Cook now the lentil ragù for 15/20 minutes tops. You can check on the lentil's box to check what is the best cooking time. Do not forget to ad a little bit of hot water every now and then in case the sauce gets too dry. Do not forget that lentils tend to absorb water and liquids in general. Once the lentil ragù is ready, keep the lid on the sauce pan and remove it from the heat so it can stay warm.

Poor some water is a large pot and once is boiling add the salt, wait a until it is boiling again and then add the pasta you choose to prepare this recipe. My advise to use a short/small shaper. Cook the past according the time on the box and once ready, strain it. You can now put the pasta in your plate and cover it with as much as lentil ragù you wish. If you are not vegan you can grate some parmesan on top to make it perfect.
