You could replace the chicken with turkey, beef or pork if you prefer.

Instructions
Step 1
Cook rice as per usual method.
Step 2
Spray a saucepan with oil and place over a low heat. Add capsicum and celery and cook until softened.
Step 3
Dice chicken and add to the pan. Cook for another 4-5 minutes until browned and almost cooked through.
Step 4
Stir through peanut butter, chilli sauce and soy sauce. Cook for another 2 minutes until well combined and chicken is cooked through.
Step 5
Serve chicken satay over rice.
