Instructions
Step 1
In a bowl add the egg, coconut milk, melted butter, and ube extract. Mix until well combined. Then add the ube jam, glutinous rice flour, sugar, baking powder, and salt. Thoroughly mix until there are no more lumps. Do not worry about over mixing.
Step 2
Grease the inside of your mug with the butter. Then add the mochi batter.
Step 3
Cook in the microwave for 1 minute and 30 seconds. Slightly around the 1 minute mark, the batter will start to rise like a soufflé. You may want to stop the microwave so the batter does not overflow. Then restart it again till this time is done. This may need to be done once or twice.
Step 4
Remove the mug from the microwave and let it rest for 10-15 minutes. During this time the mochi cake will deflate. This is normal. Eat it at this time if you would like to eat it warm. Sometimes I like to wait till it is room temperature. It becomes slightly more dense and chewy. Sprinkle with toasted coconut or something crunchy right before you eat it.
