Instructions
Step 1
In a bowl, crack and combine three whole eggs (yolk and egg whites) with salt and pepper to taste
Step 2
In a bowl, mix the dry ingredients. This includes all seasonings, bread crumbs, flour, baking powder.
Step 3
Dip each chicken breast into the egg mixture, let sit for at least 5 minutes then flip each piece and sit for another 5 minutes.
Step 4
Take each piece of chicken and dip into the dry mixture, make sure each side is covered very well, sit on a plate to the side when both sides are coated.
Step 5
If you chose, you can double bread the chicken by dipping the breaded chicken breasts into the egg mixture and dry mixture again making sure to coat each throughly.
Step 6
To help prevent undercooked chicken, you can put slits in the thicker parts of each piece, I do this after it has browned on each side and cooked the outer layer of each piece
Step 7
If your chicken starts to burn, turn down the heat. It should only be on medium after you initially heat the frying oil on high and brown each side lightly
