Mango Lemon Bars
More mango recipes coming your wayyyy! I love the lemon bars from Trader Joe’s. The crust and the filling kind of have this chewy and slightly gummy texture to it so this dessert was inspired by theirs. I usually don’t like sour stuff so the mango adds a little sweetness to balance it. I used a 9x9 pan to make these because I love the thick buttery shortbread crust.

Instructions
Step 1
Cut mango and make a mango purée. Make the crust by adding butter, powdered sugar and flour together. Mix with a hand mixer or use your hands to combine thoroughly.
Step 2
Line a 9x9 pan or 9x13 with parchment paper and press the crust mixture into the pan. Bake at 350 degrees for 20-22 minutes.
Step 3
While the crust is baking, make your filling. In a bowl, add eggs, powdered sugar and mix. Add vanilla, lemon juice, flour and mango purée and mix again. Pour the mixture over the baked crust then bake another 30 minutes. Let it cool and dust with some powdered sugar.
