Instructions

Step 1
Combine garlic powder, soy sauce, rice vinegar, and honey in a bowl. Add salt and pepper to taste. Marinate chicken in bowl for about 20 minutes in fridge.
Step 2
Combine coconut milk, peanut butter, soy sauce, brown sugar, rice vinegar, garlic, and ginger in a bowl. Mix until even consistency. Set aside.
Step 3
Add salt and oil to panko breadcrumbs. Beat eggs in separate bowl for egg wash. Remove chicken from marinade. Coat chicken with flour, egg wash, then Panko.
Step 4
Air Fry chicken at 390 degrees Fahrenheit for 8 minutes, Flip chicken, continue air frying at 400 degrees Fahrenheit for 2 minutes.
Step 5
Serve with rice and vegetables. Top chicken with peanut sauce.
