An Easy Mutabbal of artichoke hearts marinated in a lemon garlic-mint vinaigrette in a bed of creamy tangy potato mixture.

Ingredients

1 clovegarlic
minced
400gpotato
pealed and boiled
¼ cupfresh mint leaves
1lemon juice
to taste
3 Tbspextra-Virgin olive oil
½ tspsalt
½ tspcracked black pepper
400gartichoke hearts canned
drained or Frozen and thawed
Garnishing Ingredients
Instructions
Step 1
Pulse the garlic, boiled potatoes, 1 tbsp lemon juice, 1 tbsp olive oil, pinch of salt and 1/2 of the mint leaves in a food processor until finely smooth mixture.
Step 2
In a large bowl, whisk 1 minced clove of garlic, 1 tbsp lemon juice and 2 tbsp olive oil, remaining chopped mint leaves, add salt and pepper, then toss with the sliced the artichoke hearts, taste and adjust seasoning.
Step 3
Distribute the potato mixture in a serving dish, and put the artichoke on top, (or you can slightly toss all together).
Step 4
Just before serving, garnish serving plate with the chopped greens, a generous drizzle of olive oil and serve it with toasted bread as a starter or side.
