Instructions

Step 1
Boil one cup of brown or wild rice (but you can use quinoa or any other type of grain) according to the package. Turn off the flame and leave covered for another ten minutes.
Step 2
Cut tofu into cubes, set aside on a paper towel, cover with paper towel and weigh it down with a heavy pan plus other weight to press out the water.
Step 3
Make marinade by mixing all ingredients. Then marinate tofu for two hours, turning over once in the middle.

Step 4
Remove tofu from marinade and bake on a tray in the oven with a bit of olive oil for 40 minutes, turning in the middle (I don’t think I actually baked it for that long).
Step 5
Meanwhile, in a saute pan reduce the marinade, then add the baked tofu to the pan to get it a bit crispy. Set aside
Step 6
Grate, chop, or slice thinly a variety of colorful vegetables. Set aside

line the bottom of the bowl and the sides with lettuce

Pile up shredded cabbage on one side, grated carrots on the other, rice, beets, a box of microgreens (sprouts) and the tofu.
Step 9
Serve with the dressing on the side and mix at the table.
