Cabbage
Step 1
Preparing the Cabbage:
1. Slice the cabbage into long thin pieces using a vegetable grater or a knife.
2. In a large bowl, mix the cabbage with all the other ingredients and knead it with your hands for a few minutes. Then cover it and let it sit for a few hours or ideally overnight in the refrigerator.
Meat
Step 2
Meat: Slice the meat into thin slices and mix it with all the other ingredients. Marinate for at least an hour or even better, overnight in the refrigerator.
For Döner breads
Step 3
1. Put flour, salt, sugar, and yeast in a bowl.
2. Gradually add warm water and knead for at least 10 minutes until you have a smooth dough that no longer sticks to the bowl or your fingers. The dough should still be soft.
3. Cover the dough and let it rise for at least 1 hour until it doubles in volume.
4. Preheat the oven to 250°C (482°F) top/bottom heat.
5. Divide the dough into 6-8 pieces and let it rest covered on a baking sheet for 10 minutes.
6. In the meantime, mix the yogurt and egg yolk well. Then place a tablespoon of this mixture on the dough and shape it into a round bread as shown in the video.
7. Sprinkle with sesame seeds and black cumin seeds and let it rest for another 5 minutes.
8. Bake the bread at 250°C (482°F) top/bottom heat for 10-20 minutes until it is golden brown.
9. After removing it from the oven, immediately cover the bread with a kitchen towel to retain its moisture and keep it soft.
Tzatziki
Step 4
Tzatziki: Grate the cucumber using a vegetable grater and squeeze out any excess water if necessary. I didn't squeeze out the water from the cucumber because my yogurt was quite thick. If your yogurt is a bit runny, it's better to squeeze out the water from the grated cucumber.
