cooked, peeled, roughly chopped, cooled
8 cupsshredded cheddar-jack cheese
8eggs
4 tspsalt
4 tspgarlic powder
2 tspground black pepper
4 tsponion powder
1 tbcayenne pepper
2 cupsfresh cilantro
chopped
2 cupssoybean oil
10 cupspanko bread crumbs
Instructions
Step 1
Combine all ingredients except oil and breadcrumbs; mix. Continue mixing while slowly adding oil. Add small amounts additional oil if mixture is not sticking together. Use a 3"-diameter scoop to portion; roll into balls and then roll in breadcrumbs. Flatten to 3/4 inches; fry on well-greased griddle or cast iron skillet until each side is golden brown.
