Instructions

Step 1
Heat oven to 350 degrees Fahrenheit. Line the bottom and sides of a 9x13 pan with parchment paper.
Step 2
Add the oats and chopped almonds to a baking sheet and bake for 5 minutes, stir and then bake another 3 to 5 minutes or until lightly toasted. Transfer to a large bowl.
Step 3
Combine the ghee, honey, monk fruit, vanilla extract and the salt in a small saucepan over medium heat. Cook, stirring occasionally until ghee melts, the mixture is bubbling and the monk fruit sugar completely dissolves.
Step 4
Pour the mixture into the bowl with toasted oats and almonds. Mix well.
Step 5
Let cool about 5 minutes, and then add the seeds and a 1/4 cup of the mini chocolate chips. Stir to combine. Some of the melting chocolate chips will help to hold the mixture together.
Step 6
Transfer the oat mixture to the prepared pan.
Step 7
Wet your fingers (damp) and firmly press the mixture into the pan. Press hard to ensure the mixture binds together.
Step 8
Scatter the remaining chocolate chips over the pressed granola mixture, and then use a rubber spatula to gently press them into the top.
Step 9
Cover and refrigerate for at least 2 hours or freeze for about 30 minutes.
Step 10
Remove granola mixture from pan, peel away the parchment and cut into serving-sized bars.
Step 11
Granola bars can be stored in an airtight container for one week at room temperature. You can also store in the fridge for firmer bars. We sometimes just leave them in the freezer. NOTE: If you are not like our family that manages to eat a double batch in 1 week, you will want to ensure bars are well wrapped in the freezer. They'll keep up to three months.
