Kim’s Specialty Salad
This is one of my favorite ways to set our palates for the taste of spring. This salad combines romaine lettuce tossed with green avocado, sweet red raspberries, crispy red onion, rounded out with nutty almond slivers and a drizzle of homemade Poppy Seed Dressing…it’s the perfect flavor combination.
Top with roasted chicken breast pieces or salmon to make it a meal!

Ingredients
10 servings
2 headsromaine lettuce
torn
0.5 ptraspberries
1avocado
peeled, pitted and diced
1red onion
chopped
1 tsugar
2 ozsliced almonds
pkg
½ cPoppy Seed Dressing
Poppy Seed Dressing
Instructions
Step 1
Suger Coat the Almonds:
Melt sugar in a saucepan over low heat. Immediately add almonds and toss to coat. Remove almonds from pan and set aside. When cool, break into pieces
Step 2
Prepare the Dressing:
In a blender or food processor, combine first 6 ingredients and process until blended. With blender on high, gradually add in oil until blended. Makes 1-3/4 cups.
Step 3
Gently toss all salad ingredients together in a large bowl. Drizzle with dressing. Gently toss again and serve.
