Instructions
Step 1
Turn broiler on set to high
Step 2
Cut onion in half and place in mixing bowl with tomatoes and toss in olive oil salt and pepper.
Step 3
Lay onions and tomatoes cut side down on the baking sheet.
Step 4
Place in preheated oven about 5-6 inches from broiler
Step 5
Cook until both have some char and the tomato skin has puffed a bit. (once done, I usually peel the skin from the tomatoes)
Step 6
Over medium heat, brown garlic for a minute or two in a tablespoon of vegetable oil. Toss in chilis and toast for an additional 2-3 minutes making sure not to burn.
Step 7
Add toasted chiles and garlic to blender with water and vinegar. Let soak for about 5 minutes until tender. Start blender on low speed and gradually raise to high. about 15 seconds or until everything is blended through.
Step 8
Add tomatoes and onions. Puree on high until fully incorporated and smooth. Turn to low speed and add vegetable oil in a slow stream until fully emulsified.
Step 9
Taste and adjust seasoning if needed.
Step 10
Store in an airtight container or squeeze bottle for up to 2 weeks.
