Toscano’s Spicy Peanut Noodles with Veggies and Salmon

Ingredients
4 servings
1 boxpad thai noodles
I like the brown rice version
salmon
or protein of choice, chicken, shrimp, tofu would all be bomb here
1red bell pepper
1orange bell pepper
0.5red onion
1 headbroccoli
2green onions
1baby bok choy
chili crunch
green onions
limes
peanuts
for optional topping
Peanut sauce
Instructions
Step 1
1. Add all of the sauce ingredients to a bowl and mix until combined. Then set aside.
Step 2
2. Cook your pad thai noodles according to instructions and then rinse with cold water until they are completely cooled.

This is 100p necessary or else these noodles will stick together and make you want to cry (speaking from experience.)

3. Chop your onion, peppers, broccoli, green onions, and bok choy and then add to a skillet over medium heat and cook.
Step 5
4. While veggies are cooking, add your salmon to an air fryer and add a portion of the sauce mixture to the salmon. Air fry for about 10 minutes at 375 until done to your liking. You can also do this in the oven at 400 for about 12-15 minutes!

5. Once veggies are mostly cooked, add in the rest of the sauce mixture and simmer for about 10 minutes on low heat.
Step 7
Then add in the noodles and mix around.
Step 8
6. Serve noodles with the salmon or protein of choice and top with crushed peanuts, more green onions, lime juice, and chili onion crunch! ENJOY :)
